The first Pizza Capers store was opened in Kenmore in 1996, with the vision of supplying the market with high quality, gourmet pizzas, previously unavailable in Brisbane.
The 2nd store was opened in 1997 at Toowong. In 2002 Chermside and Jindalee stores opened. In 2003 Clayfield, Kallangur & Annerley stores joined the group. 2005 saw the opening of Camp Hill, Arana Hill and Chelmer stores.

Pizza Capers takes unrelenting focus on quality and innovation. New products are being created and brought to market continuously, with healthiness, freshness, variety, taste and quality at the forefront of development. Ingredients such as lower fat mozzarella cheese, a low oil dough recipe, butcher fresh lean meats, premium Tasmanian Camembert, quality seafood are example of this.

The focus on quality people, developing them and listening to their feedback has been central to the development of the business. The people really are the business.
2001 saw the development of innovative software for point of sale, Pizza Capers became the first Queensland pizza company to offer internet ordering.
During 2002 a team of chefs created a line of high quality, fresh pastas and sauces, using a special cooking style. This continues to be unique to Pizza Capers.
In 2003 Pizza Capers became the first gourmet pizza chain to launch a gluten free pizza to the market.
In 2005 the first franchised store was created. The strength of this model continues to build, and there are 10 additional franchised stores planned in Brisbane in short term.

June 2006 saw the introduction of advanced “CaperACTIVE” thermal delivery bag system.
In June 2006 Pizza Capers was voted Brisbane’s best pizza by “Planet Beer – The Beer Show”. Quest Newspapers awarded Pizza Capers best new business, 1996, and has been the recipient of numerous awards and nominations since. In 1996 the listeners of Nova 106.9 radio station voted Pizza Capers runner up in “Brisbane’s Best Pizza” promotion.
June 2006 saw Pizza Capers enter the Q400 (Queensland's top 400 privately held companies) at position 332.
